I am preparing the evening meal for my husband Chris who is returning from Portsmouth, having visited some Loughborough University students on work placements.
I am using ingredients leftover from my cooking session with the village Junior school pupils (Key Stage 2) yesterday. They have been studying the Ancient Greeks so I offered to do some Greek cooking with them. My Women’s Institute friends joined me in this venture. I feel very strongly that children should have more hands on experience in making healthy meals and using as much fresh food as possible. The village school has very limited facilities and we take along our own equipment. We enjoy sharing our skills with them and we like to give them the chance of tasting different foods. We made some filo cheese pies, Greek salad, hummus, tzatziki and fruit salad. As there was some leftover pastry and filling I made up some more cheese pies for our meal. I live in the very special village of Egginton, Derbyshire where there is a very strong sense of community. The County Council rents the village hall premises from the Memorial Hall Trustees so our hall is a school during the day time and the village hall in the evenings and holidays.
